Recipe: Super Easy Crustless Green Chili Quiche
Easter is just around the corner! I love this time of year when we have the opportunity to focus on and celebrate the resurrection of our Lord!
Part of that celebration includes eating, of course, so I thought I’d share a favorite brunch recipe of mine! I first made this dish when my husband pastored a small church in Bombay Beach, CA while he was a student in Bible college. One of the church members helped me coordinate a spring event, and this was her recipe. I have continued to use it for Easter Brunch and special occasions over the years. It is also great for company! Enjoy!
Super Easy Crustless Green Chili Quiche
Ingredients
8 eggs
½ cup flour
1 teaspoon baking powder
½ pound grated cheddar cheese
½ pound grated jack cheese
2 cups cottage cheese
½ cup diced chilis
Directions: Mix all the ingredients together and pour into a 9 x 13 pan. Bake at 350 degrees for about 35-40 minutes (until the eggs are set).
I really enjoy your emails, they feel like they come from an ole friend. I am wondering what size cake pan you use for the chocolate lava cake? It was sent out on February 7. Praying for you, your family, and your church.

Hi Nancy! A muffin pan can be used for the lava cake. Have a great day!
Sounds yummy! Thank you for sharing it…will use it at our ladies’ daughters of Eve fellowship in May.
I am so excited to make this for our Easter and Church Anniversary Sunday! Thank you for the special recipe!
Just made this…halved the recipe…for just my husband and I…it is wonderful! Thank you so much! You are a blessing! ❤❤
